Ginger Shrimp in Lettuce Wraps

Ginger Shrimp– Ginger, soy sauce and water chestnuts wrap your shrimp with an Asian flare. It’s an Asian inspired, healthy dish that’s easy to prepare.

1. Spray skillet with cooking spray, add green onion, garlic, ginger, red pepper and chestnuts, and cook over medium-high heat for 1 minute.
2. Add shrimp and soy sauce and cook until shrimp are pink.
3. Divide leaves from lettuce and fill with shrimp mixture and roll.


2 lb. shrimp, peeled, chopped
1 red bell pepper, diced
1 tbsp. minced garlic
1 tbsp. minced ginger
1 whole green onion, sliced
1-5 oz. can water chestnuts, drained and chopped
2 tbsp. low-sodium soy sauce
1 head iceberg lettuce, cut into half and cored
